Harvest Notes - Week 18

Pie Pumpkin Decorate for halloween with these pretty pumpkins and then make pie out of them for Thanksgiving. As long as you keep them dry and out of a frost, they should store well.

Delicata Winter Squash The thin skins of these sweet squash are edible.

Red Russian Kale This cold season green is chock full of vitamins to prepare your immune system for winter.

Parsley If you want to preserve parsley, hang it upside down in a well ventilated area. Crumble into a jar once fully dried (2-4 weeks).

Tomato These are indeed winding down but we hope to have small amounts of tomatoes for a few weeks yet.

Peppers Freeze any unused peppers at the the end of the week. Just slice and freeze raw in a zip lock bag.

Purple Cabbage These will store for months in a bag inside the crisper of your fridge.

Onion These should store for months if kept dry at room temperature.

Salad Mix This mix of baby salad greens has been triple washed so they should be ready to eat. If you want to temper the sharp flavor of the mustards, try a sweet dressing.

Eggplant The crop that keeps on giving! We hope to have at least one more week of eggplant, if not two.
