Potato Leek Soup
Add three chopped leeks to lightly salted melted butter or oil. Cook until soft and wilted on low heat (10-30 minutes). Add two pounds of diced potatoes, seven cups veggie stock, two bay leaves, a pinch of freshly minced oregano, salt and pepper. Bring to a boil, then cover and simmer for 15 minutes, until potatoes are tender.
